Cookies & Cream Ice-Cream Sandwiches

Let me start off this post by saying that this is the lazy girls guide to ice-cream sandwich making! I did not make my own ice-cream in this recipe… I just used a yummy store bought tub. So, if you are happy with this whole idea of laziness then continue reading…
ice-cream sandwiches When I was little I used to love eating Maxibons – you remember the yummy ice-cream sandwiched between two chocolate biscuits at one end and covered in crunchy chocolate at the other end. Drool!! They were so good. I would always eat the chocolate bit first and save the biscuit end for last. Anyway, enough of my reminiscing. I decided that I would make my own ice-cream sandwiches using Cookies and Cream ice-cream.

I started off my making a basic batch of chocolate biscuits. I cut them into love heart shapes because, well for no reason really, except the fact that they were cute! When I make ice-cream sandwiches I like to just undercook the biscuits slightly because then they stay nice and fudgy. I only used six of the biscuits (as I only wanted to make 3 ice-cream sandwiches) but you could use more depending on how many sandwiches you want to make. It was great having yummy leftover chocolate biscuits anyway!

I then softened a store-bought cookies and cream ice-cream and smoothed it down into a lined square tray. Yep I could have totally made my own ice-cream but this is the lazy girls guide to ice-cream sandwiches!!! I popped the ice-cream back into the freezer to harden again. Once the cookies were cold, I lay half on a tray. I then got the ice-cream out of the freezer and working quickly used the same heart shaped cookie cutter to cut the ice-cream into heart shapes. I then popped the ice-cream love hearts on top of the cookies and topped then with another cookie. It’s a little fiddly and you have to work quickly… but it’s all worth it in the end! I then smoothed the sides using a spatula and popped them back into the freezer to harden.

Finally, I grabbed the sandwiches out of the freezer, sprinkled the sides with sprinkles (to add to the cuteness factor!) and then poured over a whole heap of Ice Magic! My of my, what a lot of deliciousness!!

These will definitely be making a return to our household very soon. I’ve already started thinking about other flavour combinations…
– chocolate biscuits with vanilla ice-cream and crushed up Crunchie bars
– Snickerdoodle cookies with salted caramel ice-cream and peanuts swirled through
– chocolate biscuits with chocolate ice-cream and mini choc chips (for an ultra chocolate version)
– vanilla biscuits with strawberry ice-cream and berry coulis poured over
– caramel cookies with chocolate ice-cream and dulce le leche
– chocolate biscuits with vanilla ice-cream and M&Ms!!
Hmmm… I think I’ve spent way too much time thinking about this!

Anyway, the combinations are endless and if you use store-bought ice-cream then it really is a pretty easy treat to make! If you were taking the lazy girl thing to the next level, you could totally use store-bought cookies too!

Cookies & Cream Ice-Cream Sandwiches

Cookies and Cream Ice-Cream Sandwiches.... need I say anymore??

Ingredients
  • 1 cup unsalted butter (room temperature)
  • 1 cup caster sugar
  • 1 egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • 2 cups plain flour
  • ¾ cup cocoa powder
  • 1½ teaspoons baking powder
  • 1 teaspoon salt
  • 2 litres cookies and cream ice-cream (or any flavour you like!)
  • Sprinkles, M&Ms, Ice-Magic to decorate (or anything at all you like!).
Instructions
  1. Cream the butter and caster sugar until creamy.
  2. Add the egg and vanilla, scraping when necessary.
  3. Sift together the plain flour, cocoa powder, baking powder and salt until all lumps disappear.
  4. Add the sifted mixture to butter/sugar/egg/vanilla mixture and mix on low speed until well combined, scraping when necessary.
  5. Divide dough in half, wrap and refrigerate for 1 hour.
  6. Once dough is chilled, roll out on a lightly floured surface until about ⅛ – ¼ inch thick.
  7. Cut the shape of your choice (I chose to use a large love heart biscuit cutter) and bake on a lined baking sheet.
  8. Bake at 180 degrees for 10 – 13 minutes.
  9. Set aside to cool completely - you will have lots of cookies so use the best looking ones for your ice-cream sandwiches and eat the rest!
  10. Take the ice-cream out of the fridge and leave to soften (but not so much that it's runny).
  11. Grease and line a slice tin with baking paper.
  12. Spoon the ice-cream into the tin and spread out until it's even.
  13. Place back into the freezer to set completely.
  14. Take the ice-cream out of the freezer and use the same cookie cutter that you used for your cookies to cut the ice-cream into shapes.
  15. Working quickly, place each ice-cream shape onto the flat side of your cookie and sandwich with another (if you're making lots of sandwiches you may need to place the ice-cream back into the freezer part way through so that it doesn't soften too much).
  16. Pop sandwiches back into the freezer and leave to set hard.
  17. Take the sandwiches out of the freezer, top with your favourite toppings (I rolled mine in sprinkles and then added ice magic and M&Ms!!).
  18. Eat! :-)
