Let’s start off by saying, Carolina Style Rub Some Butt BBQ Sauce is the best BBQ sauce I’ve ever used on pork! I found it weeks ago at Lowe’s and had to have it just for the name alone. I even posted it on Instagram because I thought it was hilarious! But when we tried it, our minds were blown! It has everything that you want and love in a BBQ sauce. The apple cider vinegar and tangy mustard is delicious! Go and grab a bottle (or two), or if you have extra time, make your own with my CopyCat recipe!
Ingredients:
- 3-4 pounds Pork Tenderloin
- 1 bottle of Carolina Style “Rub Some Butt” BBQ Sauce, If you’d like to make it from scratch,click here for my CopyCat Carolina Style Rub Some Butt BBQ Sauce!
- 1/4 cup Worcestershire Sauce
Directions: Place tenderloin in a ziploc bag, add Worcestershire sauce and 1/4 cup of RSB sauce. Seal bag and give it swoosh to get everything mixed, and refrigerate for at least 4 hours, preferably overnight. Place tenderloin on your grill, and grill on low for about an hour and a half. Turn your tenderloin 3-4 times during this process. Brush on RSB sauce during the last 30 minutes, brush as much sauce as you prefer, just make sure to keep the tenderloin saturated. Remove from grill after an hour and a half, allow to rest for about 10 minutes before cutting into slices. Serve on fresh sandwich rolls with slaw and ENJOY!
Ingredients for Apple & Jicama Slaw:
- one small-sized cabbage, julienned or finely shredded
- half to one whole medium sized jicama. Peeled and julienned.
- 2-3 Granny Smith Apples, peeled, cored, seeds removed and juilienned
- small bunch of cilantro OR green onion, washed and chopped into small pieces
- 1/2 cup mayonnaise, sour cream or plain greek yogurt
- 1/4 cup honey
- 1/4 cup pineapple juice, I used a small can of crushed pineapple and used the pineapple later for a dessert
- 2 tablespoons of hot sauce, sriracha or jalapeno juice. I used jalapeno juice from a can because it has GREAT flavor
- dash of salt and pepper to taste
Directions:
In a medium-sized mixing bowl, combine cabbage, jicama, apples and cilantro or onion. Toss everything until well combined.
In a small bowl, whisk together mayo, honey, pineapple juice, hot sauce and salt and pepper. Pour over slaw mixture, and toss to coat everything evenly. Do a taste test and adjust according to your personal preference. If you want more spice, add more hot sauce. Need it sweeter? Add more honey or pineapple juice. Place slaw in the refrigerator to allow the flavors to marry. Serve as a side or on the tenderloin sandwich drizzled with Rub Some Butt BBQ Sauce–>HIGHLY RECOMMENDED!
